Coconut burfi- fudge

The world has recently discovered its love for all things coconut. But, we Indians use coconut on daily basis in our lives. Coconut has numerous health benefits and its earthy aroma is captivating.

Here, I have used Freshly scraped coconut in a barfi or fudge. Its super easy, super quick and super yummilicious. One of the easiest Indian traditional sweets to make and very healthy too.

Ingredients

Scraped fresh coconut 4cups
Sugar 3 cup
Milk 3/4 cup
Milk powder 1 tbsp
Cardamom 2 seeds crushed
Kesar few strands
Ghee 2 tbsp
Finely chopped pistachios

Method

Step 1
Heat a heavy bottom pan and add milk, sugar and coconut. Add kesar, milk powder and cardamom powder too. Mix everything together. Cook on low heat

Step 2

Keep stirring in between for about 15 mins till it dries and starts to leave side of pan and there are no bubbles in the mix.Dont dry too much of barfi will be too dry to eat.

Step 3
Grease a plate with ghee and spread the coconut mix. Apply some silver varq and Top with chopped pistachios if u wish. Let it cool for 2 hours then cut into desired shapes.

Step 4

Eat up the super yummilicious barfis and in case some are left. Store in an air tight box lined with butter paper.
