Rocher Mug cake

This is the most special post for me as its the first bake of my 7 year old daughter. She made this for me as a special on mother’s day.

Ferrero Rochers hold a special place in my heart coz as a child they were most coveted n anticipated birthday gift from my grandfather. Eating them still reminds me of him and all my memories of it are with him. This was a tribute to him as he was an excellent cook  and I cant ever achieve his excellence. Hoping maybe Saanvi can be his reflection.

Its a perfect individual portion desert for a party as you can make in mugs and serve with a dollop of ice cream or whipped cream.

 

Ingredients

Makes one mug cake

1/4 cup all-purpose flour

2 tbsp unsweetened cocoa powder

1/4 tsp baking powder

3 tbsp  granulated sugar

a pinch of salt

1/4 cup + 1 tbsp. milk

2 tbsp vegetable oil

1 ferrero rocher or 1 tbsp choco chip

Method

  1. In a medium bowl, whisk together dry ingredients.
  2. Whisk in the milk and vegetable oil until all ingredients are combined and batter has no lumps.
  3. Pour batter into a microwave-safe mug. fill till half full as the batter needs space to rise.
  4. Drop the rocher in the centre. Microwave mug cake for 70 seconds on high . Enjoy the gooey moist chocolate bliss.
